Greetings from Baronka Ingegerd Kastanrazi, your Feast Steward for Grit War: Savory vs. Sweet!
I am delighted to present a feast inspired by the playful U.S. Southern theme of this exciting new Atlantian event, marking the Shire of Ursus Bay’s inaugural celebration. My goal is to challenge the idea that historically inspired cooking lacks comfort and flavor. With the theme of Savory vs. Sweet Grits, I embarked on a research journey into the historic origins of ingredients and traditional Southern recipes, particularly focusing on “corn.”
In line with our organization's appreciation for world history, we are no longer confined to a Western European pre-17th century perspective of flavor. Traditional American Southern cuisine did not develop in isolation. I have selected various Southern staple dishes and explored the origins of their ingredients and flavor pairings. Honoring the contributions of Indigenous and global influences, I invite you to enjoy familiar contemporary dishes placed within a historic context. This menu travels the world, spanning different points in time, drawing from North American Indigenous, Aztec, Greek, Asian, and European influences through seasonings and ingredients.
Lunch, with the assistance of the wonderful Doña Elvira de Luz, will feature her researched tamales, accompanied by light sides. (Donations for lunch to the Shire of Ursus Bay are greatly appreciated.)
